First, make sure your timeline is set up to output 4 channels of audio. Go to Settings > Settings > Audio Outputs tab. Select 4 channels instead of the default 2. You have the option to set mono tracks or stereo tracks.
After you’ve done that, right click on patch panel area of each track and change the audio output setting to the audio channel you want that track outputting on.
I do this all the time and Quicktime will output as many audio output channels as you specify.
