I think you need to decide if this will be a hobby or if you will pursue this vigorously. As a hobby, it doesn’t really cost you a lot and you have nothing to lose except time and money.
Look a few posts down on this forum and you’ll see a link to a webcast I recently was a part of about voiceover.

I may be wrong but I think you should be able to have both mono and stereo tracks in the same project.
You can pan the mono tracks to the center and they will fill both stereo output tracks.
How did you acquire the software? There’s an adobe audition on line forum and there are help files that should have been installed when the software was installed.
It’s a pretty powerful and versatile program.

Expecting us to guess which setting does what (and how well) from your written words, those in a manual or wikipedia is futile.
Your job, should you decide to accept it, is to put the lav into the recorder, put the lav on yourself, walk and talk, find out which settings work best and report back to us. No guessing. No interpolating. Just the facts.

Hello Matthew and welome to the Cow Audio Forum.
The piece you’re missing is a stereo audio power amplifier to power your JBL. The JBL are rated at 60 Watts each, so you don’t need a very big power amp; just a good one.
You can probably go from the Mac line out to the power amp to your JBL. Having said that, Mac outputs can be noisy. I use them myself but have added a buzz eliminator, which you would put between the Mac and the power amp.
I would suggest a power amp mfgr for you, but I haven’t had to buy one in years

Hello Jason,
The AT2035 mic is directional, but I would not suspect that it would be deaf to keyboard fingering, or for that matter would any directional mic.
It might be better with a headworn mic. Like a Countryman B6, because it’s closer to your mouth (and therefore hears less of what’s around you.) I can’t guarantee it’ll not hear the keyboard.
Maybe there’s a quieter keyboard!
