I did pretty much the same thing.
After capturing the home videos I edited in FCP, then exported all the m4v files. Then I imported them all into my Plex server and organized them into categories, adding descriptive metadata for each file.
Now all our home videos are available wherever we are: on each TV at home, but also iPhones, iPads, etc. when we travel (if we ever do again).
Huge benefit is that I can add users and share specific folders with family members all over the country. My brothers can log into my server and watch our home videos whenever they want.
