The cost of living in Winnipeg is notoriously low. I bought a 5 bedroom house, 1500 sq feet for $220K a few months ago.
This is a lesson for the OP, there is no industry standard, so many things to take int account. Living in Winnipeg is a lot cheaper than living in Vancouver, so rates are lower here.

That’s my rate for shooting and editing. For producing it depends on the scope of the project, I don’t really have a day rate for that but a project rate.

$400 for my labour for full day up to 8 hours, $250 for a half day up to 4 hours. Camera or editing gear is extra.

Its simple, do you own the raw footage? If yes, you can do what you want with it. If no, then you need permission from parent A that paid you for ths shoot.
Do you have anything in the contract about that? If not then you should put it in now. You are being paid for the shoot and the edit, IMO the parent hiring you owns that footage.

Is the documentary going to be the next big thing? Is it worth the headache of dealing with these folks when your realtionship is crappy?
Don’t force them to use your edit, that’s just hubris. Get paid what you agreed upon, give them the footage and project files and walk away and start your next project, and have a contract first next time. If they choose to re-edit that is not your concern, if they tell you they don’t want to pay you because they will re-edit, that is not your concern, that is theirs. You get paid, peroid, and then be done.
