Obvious question, sorry — but is DNR turned on in the ‘Processing settings? The DNR in the firmware update from around October helps a lot.
I’d recommend setting the Detail to -3 at the highest. Black stretch is also pretty useless — I wouldn’t recommend lowering the black level, but don’t use the black stretch at all.

The 790 is designed for a studio environment, with timecode, genlock, etc. The 700 is designed for ENG and low-end digital cinema. According to a tech I talked with at JVC, he said that the sensors were the same, but he wasn’t 100% sure.
If you’re shooting in really low light, get an EX-3. I prefer the HM700 because I need the form factor, FCP workflow, and global shutter. We’re usually shooting in situations where we’re lighting, anyway — so it’s never really been an issue.

I just get exceptionally friendly when someone owes me money. If an invoice is a couple weeks past due, I’ll call a different person in the office every day until the check is in my hand.

I use the SanDisk Extreme class 10 16 GB cards. You’d probably be able to get away with using just class 6 cards for what you’re doing, if you want to save a little money.
You can record 180 min on 32 GB of media in 720p in SP mode (which should be sufficient for what you’re doing). On page 33 of the HM700 manual, there’s a chart with resolution / record time.

The Sony EX-1 is better in low-light. If you’re doing any handheld work, absolutely get the HM700. Fantastic form factor.
Personally, I’d recommend the HM700 for your primary cam and the HM100 for your wide shots.

Yes, it’ll work fine with CS4. Ask the Google — you’ll find other forum posts about it.
The Sony EX-1 and EX-3 cameras are close in DOF characteristics.

To answer your second question…
What kind of footage are you shooting? For the House finale, they shot exactly what’s best for those cameras — organic textures, no sharp straight lines, no smooth gradations, no jittery motion, etc.
Grade in Color, not in Final Cut. I don’t understand color science enough to tell you why, but I don’t notice the banding as much when I grade in Color as when I grade using the 3-way color corrector in Final Cut.

Absolutely right about the humidity.
I’ve shot for hours in the sun in up to 90 F without issues in Sony HDV and Canon DV cams.
One week I ran media for a summer camp with 80 F heat, but near 90% humidity and it shut down the tape transport on all of our cameras. Except the Sony A1U, but that one later died of a creeping corrosion from moisture damage…
