You are correct that the 2.5K is a better image than 4K. The 2.5 has another full stop of dynamic range and sensitivity though it sacrifices the global shutter and of course frame size. Frame size is in some cases able to be compensated with Metabones Speedbooster.

Yes, MFT mount can adapt to nearly anything except mounts with even shorter flange distances like Sony E mount.
Honestly, no appreciable downsides in my opinion. If anything, you may want to be conscious of particularly heavy and long lenses when using any adapter and so you may want additional lens support but frankly lens support is often a must anyway. Even so, the build quality of the Metabones adapters is top notch and I would have no reservations about using them. Seeing as the SpeedBooster is also electronic and can control aperture, I think that you will have everything that you need.
Nothing can minimize rolling shutter as it is a consequence of how all CMOS sensors expose. Individual pixels are exposed one line at a time rather than the entire sensor exposing at once as is the case with a CCD. CCD’s however are harder to manufacture at high resolutions and sensitivities and are therefore more expensive so CMOS won that war a few years ago. After Effects and FCPX both have tools to remove artifacts such as flashbanding but per rolling shutter the best thing to do is to try to avoid it in your camera movements when possible. Pan slow and steady and while some post tools might help but I couldn’t speak to their effectiveness.
Per moire, Mosaic Engineering makes an aftermarket OLPF (Optical Low Pass Filter) that will dramatically reduce moire. Not cheap but could be what you are looking for. I’ve never used it myself but the company has a good track record with DSLR’s and you may be able to find some users online with opinions on it one way or another.

Sorry, was not clear. That is the problem with using the SpeedBooster on the EF version. MFT IS a short flange camera system so the SpeedBooster is perfect for this.
Other advantages are the low light performance and increased field of view that come with the SpeedBooster. You could adapt to Nikon, Leica R or M, or even PL lenses if you wanted to, and of course you could use MFT lenses, some of which are quite superb, like the Olympus Pro zooms, and the Panasonic/Leica primes.
I know that you own EF lenses but there may even come a day when you want to rent something different and the flexibility that comes with the MFT mount really can’t be understated in my opinion.

That’s 100% correct. Think of the MFT mount not as a lens mount but as a base platform for adapters.
The problem is that the flange distance of the SpeedBooster is designed for short flange camera systems. Going MFT though is a smart move as it will give you options for the future.

When do you need the camera?
If you can wait at all, I think that Panasonic has a real home run in the upcoming DVX200. From what you describe I think that it would fit your needs perfectly while being cost effective, reasonably future proof, and simple to operate. Timecode I/O and full size audio inputs are both very welcome additions.
Personally, I do not always advocate for interchangeable lenses and full system cameras like Blackamgic etc, if it is not necessary for the workflow and image. I think that the 4/3 imager in the DVX200 will give you more than adequate depth of field for a cinematic look and as someone who learned on Panasonic handheld ENG cameras, I can confidently say that they just do things right and do them well.

You need IRND with both cameras at high stops of ND. Get a Schneider Tru-Pol Circular Polarizer and Schneider Platinum IRND .9.

The new sensor is supposedly much more sensitive with greater dynamic range which should all equate to significantly less noise. The original URSA had the same FPN because it is the same sensor and general processing as in the 4K production camera. Of course if you need something NOW get whatever you think will suit you and you can always sell it further down the line if another camera comes around.
Also with the same sensor as the 4K production camera and without the same noise issues is the AJA CION which is now on sale for $5000. Might be worth a serious look.

Honestly, it doesn’t look like the lens is going to fall off. I’ve seen mounts with that much play if you really try to move it but in your video it is hard to tell how much force you are using. Still, it shouldn’t be seen while focusing that’s for sure. Sounds and looks to me like it doesn’t fit properly. I would try and overnight a replacement and return the defective mount. If both are bad it’s up to you how much trust you have in them traveling to Peru.

Take the mount back to the shop where you got it and try another in the store before you take it home. It sounds like a manufacturer defect and you should have no problems exchanging it. If the problem continues contact meatiness regarding a possible bad batch on their end.
Try other adapters, possibly with different mounts and from different manufacturers to see if it might somehow be the camera mount itself instead of the adapter.
It’s true that the Metabones mount should not have any play or at least be very minimal.
