I stumbled upon this old thread when searching for the same question but couldn’t find the answer either so when I later on the day found how to do it, I thought that I could answer this question as well.

1. Add a job to the Render Queue.
2. In the “Output to” menu choose Custom…
3. Here you can add your own (relative) output locations.
examles:
[projectFolder]/Output/[compName].[fileextension] => renders in the folder “Output” alongside your project file.
[projectFolder]/../Output/[compName].[fileextension] => renders in a folder alongside the parent folder of the project file.

If you make that custom template your default with the checkmark and leave the “Use default File Name and Folder” prefs setting ON, you never have to manually select the output locations again.
