If you learn how to use it correctly, it can absolutely allow you to do that.
I prefer to record at 16-bit/48kHz and dither down to CD quality (16-bit/44.1kHz) if I need to meet standards.
The on-board stereo mics would be great for room mics and you could use the XLR inputs for close-miking the piano.
What type of mics are at your disposal and how do you plan on using them to record the piano’s sound (placement, mic pattern, etc.)?
Keep us updated and feel free to link to a recording when finished (just get permission in writing – even if it’s your own mother).

I suggest you read this article. A wye cable should only be used for passively splitting a signal. If combining passively, there should be resistive summing so that there isn’t an impedance mismatch.

Wonder how to tone that down?”Well, if you can correct it at the source, that is always best. Are you able to talk to the guest speaker before you record the interview or does it have to happen live? If you can get him to hold the phone down towards his chin more, that might help.
If you want to deal with it in post, try a generous cut around 180Hz-300Hz. Adjust to taste.

Yeah, RF can get in anywhere there’s enough metal to make an appropriate-length antenna or certain fraction of the wavelength of the original (I think it’s 1/20th when you take into account the entire run of cable from source to input).
Those Neutrik connectors seem to work well – I don’t know if I’ve ever used them.

Certifications are always handy to have since they show ACTUAL EXPERIENCE in whatever field they are for. Some rigging certifications, for example, require 3,000 hours of in the field experience just to qualify to take the test.
I’d look into: AES (Audio Engineering Society), SynAudCon, SMAART and/or EASERA training (maybe also Meyer SIM, etc.). ETC has some good lighting board training, but I can’t think of too many for video, sorry – I’m mainly a sound guy 🙂
InfoComm is not something I am familiar with, but do your research and see if it fits.

Sennheiser (and many other wireless microphone manufacturers) has a frequency finder that will help get you in the ballpark. After that, you will be much less likely to have interference from surrounding TV stations.
As Ty mentioned, it is possible (and quite likely) that you will get interference from devices that the audience brings into the space. Nextel is notorious, from my experience. The only way to truly solve the actual problem is to have everyone turn their devices off (unlikely). I make it a habit to do so when I attend events where RF is used (microphones, IEMs, Comm. packs, etc.).
Of course you could build a Faraday cage for the presenter to stand in, but…that might not look too nice.
Then, there’s my favorite option: a wired microphone. Is there any reason that you cannot use a wired microphone to pick up the audio?

I recommend you stay with the real world and keep getting experience that way. Unless it is a certification or specialized training that is required for the industry, I would skip it.
Stick with the school of hard knocks and find a place that can use your abilities. Keep on learning and experimenting and I don’t think you’ll have a problem going further than you are now. 🙂
