I can’t remember when this changed, but those graphs are located under the graph editor now. In your composition, the last icon looks like a sin wave over a graph, that accesses the graph editor. Click on the proerty you would like graphed and it will be displayed in the graph editor.
The second pulldown of the editor will determine whether you view your graph in terms of value or speed.

I downloaded the file to be sure, but most likely that’s just clip art. One layer of artwork is placed on screen for 3 frames, then another layer of artwork, then another. Each group of pictures(the left ones) are precomped and a slight scale animation is placed on them, but that’s it. You could photograph friends on a green screen if you wanted original images…or just cut out pictures from a magazine and scan them, but there isn’t anything really happening with the people.
Anyway, I downloaded the video and did a jpeg sequence of what’s happening at 33 seconds. Take a look and when you watch it frame by frame you can see nothing going on except some slight scaling.

I’ve generally heard it referred to as “kinetic typography”. Here’s a fairly simple tutorial about it:

..but what about the graphics? I guess it could be done in AE using puppet tool. But is there any special name given to it?
I’m not sure what you are referring to here. If you could reference a specific time in the video, that would be helpful.

Without knowing what codec you are currently using or your deliverable it’s pretty hard to make suggestions. That being said, take an uncompressed version of your file(looks like you already have that made) and bring it into Media Encoder and mess around with the Quicktime H.264 settings.
The big setting to play with is the bit rate, that’s going to make the biggest difference in quality/size. Off the top of my head, start around 12Mbps and move up and down from there.

Not nearly as handy as Horizon and a quite a bit more render intensive, but a useful script that will do some of what you want. pt_Panorama, a name your price script.

Are you using a two-node camera? That would cause the Z flipping as the camera moves past the “look at” point? You can check that by double-clicking on the camera and checking the pulldown in the top left of the camera dialogue box.
If the 2 node/1 node change doesn’t help, post your question in the After Effects Expressions forum. Dan Ebberts, the man who created the motionscript website is there all the time and will probably be able to adjust that expression to do exactly what you need.

16GB, minus 4 for the operating system(probably too much, but lets be conservative) leaves you 12GB for AE spread across 4-cores. You might should also look into some Solid State Drives also to speed up performance if you are going to run CS6.
It’s hard to determine the what “volume of work is small” exactly means. If it’s creating backgrounds, animated lower thirds and projects of that nature, that machine should take care of your needs. It’s not going to win any races, but at best you will only get to have one cigarette while it’s rendering.

Glad you will be able to finish your project. Obviously you have discovered that the AE default lens flares aren’t that great, just too basic. Optical Flares are pretty good though, when you finish with your logo project Andrew Kramer of Video Copilot did a great set of tutorials on using them. You should definitely check them out.
