Thank you for your help, in their guidelines they provide the following information,

5mm bleed at the final output size should be added on all edges, if the artwork is supplied at
a proportion to the final output size ie ½ full size, the bleed added should be proportional
to the final output size ie 2.5mm, bleed will be removed during finishing.

So, if the required size is W: 10080mm x H: 915mm, I then would set up in Illustrator the artboard to size,
W: 5040mm x H: 457.5mm.

Will that be the correct direction to go in, taking on board your advice?
