It all comes down to the resolution of the projector, which is frankly way too low for the application. 1280×800 is just too low for a really large projection. Pretend you were printing it–would you send a file to the printer for a 12-foot billboard if it was only 1280×800? No way. That’s exactly the problem here–the resolution of your source image could be 15 gazillion megapixels, but the projector can only display 1280×800.
So, you have two options: rent a 4K projector, or go the film route. Or of course, option three, just greenscreen it for real!

I’d say you need to stop reading reviews on the internet and just go mess with it. If you’re not shooting the lenses wide open, it should be fine. Once you stop them down a little, the sharpness difference will be negligible.
I think you’d be hard pressed to find a production that uses only one lens for the whole thing. Stop worrying and go make your movie!
PS: there are better options out there than the BMPCC. A used Sony A7s will be much more versatile, have more usable battery life, give you more options for the lenses, and give you more FOV from the lenses you’ve got. It shoots 8-bit 4:2:2 in sLog color space, which is more than enough dynamic range for grading.

No, we don’t. This effect is a result of the camera’s shutter interacting with the Pulse Width Modulation of the LEDs. It’s similar to the effect created when a camera’s shutter speed is set incorrectly around fluorescent lights. It’s not repairable in post.
Basically, the LEDs are flickering very quickly, faster than your eyes can perceive, but your camera’s shutter is picking it up. Since they’re LEDs, and not fluorescent, there’s no way to know what speed they’re flickering, and thus, the only fix is to mess with the camera’s shutter until the effect doesn’t show up anymore. Or, of course, to use different lights.
I worked for an LED company for four years, so I know what I’m talking about. Unfortunately you can’t fix it in post (believe me, I’ve tried).

No. Besides the mount being incompatible, the lens is designed to cover a much, much smaller sensor than the ones found in DSLRs.

I’ve learned not to buy “intermediate” gear. That $800 could be spent on a lot of things that you can keep using long after any camera body–lenses, camera support, audio. Buy those things first, and then, when you’ve made money from those, get the camera body you really want.
Will the video quality be better? Yes. Would you rather have another camera? Then don’t buy it, and save up for the one you really want!

The A7s is the Sony camera you want. The A7r, not so much.
It will be a major improvement over the 7D regardless, because the 7D is really old. But the A7s is better for video than the A7r. That’s where I’d invest my money if I were you.
Don’t forget that you’ll need an adapter for your Canon glass–that will add cost.

Shimpei, if you don’t already have it, download the free Audacity program. It has the ability to resample your audio to a lower sample rate, which has the effect of slowing down and pitch-shifting the audio to an audible range. If the audio was recorded at a sample rate of 192kHz, you should resample it to a low enough rate that your 100kHz sounds drop down into the audible frequency range.
