Wow! Thank you so much for your help, everyone 🙂 For my own personal use, I’ll certainly be keeping all of these suggestions in mind.
Unfortunately, once corporate had seen the costs for my camera (it’s a new position), they flipped and told me to cut/downgrade my equipment. Sadly, I have more at my own house than what I do at my job, and will have to be somewhat clandestine in my equipment use. Though I think it’s safe to say that that’s pretty much every videographer’s life story 🙂
I’ll be using a 7D MK II for both filming and photos. I did see a video that shows how to export 1080 to “4k” size (it’s mainly a bit rate trick), but even then, our demographic will most likely max out at 1080p for now. I’d like to have a 4K option, but I’ll certainly make some great video none-the-less, and keep these suggestions in mind after they realize they need to update/upgrade equipment.
Thank you again to everyone for your insights, video tests, and question posing. It’s always nice to have more experienced people look at issues.

Ah ok. I’m picking up what you’re putting down.
Thank you to everyone who posted. This helped open my eyes and I’ll be looking into more options since it seems as though a cheap, regular lav mic would be equally effective compared to the wireless mics on the market. That actually leaves the door open for more gear, too (woo!!). And I’ll certainly be checking out Mr. Bartlett’s link as I want to know as much as I can about audio for video.
Again, thank you guys all so much for the links and pro advice; such an amazing site and group of professionals.

Hi Guys,

Thank you so much for the feed back. Luckily, this is one of those rooms where they were willing to bite the bullet and spend a few more $’s to make sure we don’t need anything else for a couple/few years. So I’ll be starting off with those suggestions first since they’re from the pros 🙂

Yes, my drives were already mounted to my computer before I start up FCP… I’m so perplexed about this haha!
Is this going to affect my file routs since it’s going through “Admin” and not my User profile?

Hello Ty,

You might have hit the nail right on the head on this one. I’ve used this mic set up previously on a couple male models and it wasn’t nearly as prominent. She’s an actress as well, so part of it might be that she’s over-enunciating her words (maybe?). Either way, thank you so much for your insight! I’ll for sure keep this in mind for the next shoot I do.
