Is there a technique or perhaps a plug-in to simulate time-lapse? Something like grab every 30th frame from 30fps video and assemble it together?

You can render your footage out sped up to the max and then render it out as many times until you get the desired effect.

and with each next render you get worse and worse overall quality unless you are rendering to uncompressed which potentially kills your disk space. J.A.B.A
    just another brilliant advice…

If you have Vegas Pro, use a velocity envelope and the Ctrl+drag technique to speed it up 12X.
    Save this file.
Start a new project, import the veg file and repeat the process giving you another 12x which means a total of 144X.
The advantage to this is no rendering until you’re ready.
Make sure to disable resample on the event.

Lots of good ideas, thanks guys! Although a plugin to grab every nth frame does sound like kind of a good idea too. Have to work on that…
