So, once P2 Contents and single file are copied from the card onto my hard drive (and put into a folder), can it be played by the P2 viewer app? If so, how?

Your questions are linked. Yes you can play it back in the P2 viewer app, by using the footage as a virtual P2 card. Once you point the P2 Viewer at the folder where you copied the footage, that folder becomes a “virtual” P2 card, and the Viewer program can play that footage back.
I don’t know if there’s any documentation available for the program; I kind of had to poke around with it to figure it out. You can go to the Tools menu and choose “setting virtual P2 cards”, which will bring up a dialog box; one of the options will let you navigate to a directory and choose it. Once you do that, you’ve registered that directory as a virtual card. Then in the left side window you can tell it to display the secondary bin as “all virtual p2 cards”, and all your hard disk clips will show up in that window.
