Hi Dave.
As I wrote in the subject, Vanishing point.
A fairly old-school photoshop to ae trick to give a 3d like effect to a suitable (plane-able) image.

And the well known parallex background and forground is another method im playing with…

im looking for some more, even general, ideas of turning simple 2d images to a more interesting and/or visually appealing…

A manually created z-depth channel can be pretty useful. It looks better if used with a plugin that can create a 3D object out of the map (Freeform Pro or Mir, for instance), but can also be used, to a limited degree, with the displace effect. A combination of a manually created depth channel with a grayscale version of the original image itself overlaid onto it at low opacity (a sort of a bump map) gives much more detail into the depth map.
