Your ‘Project’ settings are 1920×1080, and your source media is 1280×720. If you preview 720 HD in 1080 HD it is going to loose resolution. Set your project settings to match your source media and the preview should look a bit better. Also render at 720 HD to retain the quality of your original source media. If you render at 1080 HD it is going to look like lower resolution, because it is. Essentially taking 720 HD and rendering (as well as previewing) at 1080 HD you are upscalling and that may be why you see a difference.
You may want to consider upping the record quality in your capture application to 1920×1080 HD if that is what you want as the final render quality. And increase the bite rate while recording if your application permits that.
As you point out, I really cannot tell a difference in quality between the two screenshots you posted, but if you make the changes above, you should then see an improvement.
