perhaps there is script that can help me create what I am working on:

I am creating a pop-up book type of animation, where, as the object is pulled open (like a book opening) the solids fold and form a 3 dimensional object (in AE, 2.5D)

I realize there is definitely no script that accomplishes exactly this, but perhaps there are some scripts (or AE projects) that can help me along my way. One that comes to mind, and I will use, is Chris Green’s “replicate_as_spine” script.

    any other recommendations?

I’ve only ever considered this kind of stuff to be possible with deep working knowledge of inverse kinetics. The ability to link one or two spines to one or two folds and to get them to react realistically is possible with simple expressions and parenting; we’ve all been doing that stuff since AE5 or so.

Hope you get the advice you need here but I’d also start looking at 3D apps.
