setting bin defaults
Is there any way, aside from dragging the columns around for every bin, to set used-determined bin defaults?

There is no way to change the column default that I know of, but you can save and quickly switch column layouts. Right click in column header and in the shortcut menu there is an option to save layout. You can call up the column layouts from the same menu.
