    I often want to select people in PS and put them in front of a different background. What are some of the best simple techniques for selecting them? I especially wonder about how to select frayed hair so it won’t look fake when I past it down.

    One way is use a layer mask, use the paint brush tool to paint around soft area like hair. Use the pen tool around other areas, make a selection and fill it.

    Another way is try using one of the images existing color channels. I often will find one with good contrast between the persons hair and the background. Use the curves or levels tool to increase the contrast and paint brush tool or eraser tool to clean up the rest of the image and then use it as a selection to create a layer mask.
