I noticed that S-Video is an option on my Decklink, but there is no S-Video connector on the breakout cable. Do I need an adaptor or is this simply not available?

You need an adapter. S-Video to two RCA’s (Phono plugs). Make sure that this adapter is the one that separates Chrominance and Luminance. The cables should actually have little labels attached to them to show which is which.

Then you plug the Luminance one into Y in (or out) and the Chrominance one into B-Y in (or out).

this is the answer to your question –

HOWEVER, you must repeat after me, right now –
    “it’s 2009 – no one uses S-Video anymore
    S-Video is dead
    S-Video is dead
    S-Video is dead”
