Mmh, actually this is possibly more or a Photoshop task. If it’s supposed to really be convincing, you need to cut out segments of bricks or even single bricks and arrange them in a manner like some real housebuilding would be done. For letters that only consist of straight lines you could even construct side faces and map them on 3D layers in AE. The point here is that it’s all about structure. It needs to feel logical and simply displacing stuff won’t work ‘cos everybody knows how certain structure would fall apart in reality. You can possibly also get some interesting results with the Shatter effect. It has a built-in brick shape pattern and if you use a custom shatter map, you should be able to control at least in part where your blocks go. Lastly, as another 3D-ish effect, use good old Card Dance. By combining multiple instances and creating custom maps for scales and offsets of your cards/ bricks, you are sure to get some interesting results. Just don’t be hell-bent on sticking to 100% perfectly regular pattern as with your font.
