I’m an occasional user and I don’t know what the term is for what’s happening, but if I reduce the length of one clip by using the end handles, it draws in the next clip adjoining it. Sometimes I cut a bit of audio out and then further on all the audio is out of sync as this rubber band like thing happens. What’s it called and how do I stop one clip end dragging the other in?

I think you are describing ripple edit behavior. On the edit page you can choose between ripple editing and non ripple where you can adjust a clip length without moving the clips before or after on the timeline. It’s such a basic aspect of editing that you will find plenty of YouTube tutorials explaining that.
