By connecting a camera/deck/converter to the iMac and the monitor to the camera.

I’m not sure of the quality, but you could try the Screen Doctor (https://www.rutemoeller.com/mp/ibook/ibook_e.html) – this will enable the extended desktop/second screen functionality on the iMac G5.
If you then plug in an Apple Video Adapter, that’ll provide a Component/S-Video connection – could you connect your monitor using that?
