need to burn to disc 2 1/2 hours of footage using 2.0 and unsure what presets should be?

This will depend on the type of audio you are using, although I would recommend PCM.
If this is a DVD with no menus and PCM audio:
2 Pass VBR
Min: 1 Mb/s
Average: 2.5 Mb/s
Max: 7.5 Mb/s
You could mess with the GOP structure depending on the type of footage you are working with, but either way, this is a lot to put on a single DVD.
