PC Build (i7-8700K) for 4K/XR-Compositing

i am about to buy a new PC. At the moment I am running a i5-2500K, 32GB RAM; it is several years old.
In the near future I will do mostly UHD-Compositing (20+layers, 2D, no 3D), mostly AE, some Nuke, some grading with Resolve, some XR compositing/editing, some video encoding.
My budget is $2.500,-CPU: Intel Core i7-8700K, 6x 3.70GHz (no oc) – $390

Graphic Card: Palit GeForce GTX 1060 Dual, 6GB – $390 will connect 3× full hd TFT

Should I really already max out the RAM or wait for the prices to drop?
Do you have a recommendation regarding the mainboard? Everybody seems to be buying a Asus ROG Strix, but I don’t like the scarceness of USB3.0/3.1 connections.
