    Hello,
    Using a comp size of 720×480 anamorphic, I’m going to be panning over large layers (7500×7500) to give the appearance of ‘flow’ (like following growing vines, or lines being drawn…)
    I’ve thought about the pro’s and con’s of repositioning and keyframing the layers, as well as using camera moves (and both), and am quite confident I can do it several ways, but prior to beginning, I’d like to know if there’s a standard method for this type of thing.

    Moving the layer has the advantage of giving you motion blur (which you will need to make it less stuttery). The best technique is to simply animate the anchor point. This way your camera or whatever always stays centered and straight on.
