Does anyone have a better system for offloading CF cards than simply dragging and dropping, then checking the file size matches?

I wish there was some way of the computer (mac) automoatically verifying that everything copied over correctly

If you mean creating a backup of your CF card, then maybe this will help.

Use Shotput Pro. It copies to three simultaneous locations and verifies.
