Try OPT+J. That will give you a list of every possible command FCP has. Those that are already assigned will have their keyboard shortcut listed on the side. Those that aren’t already assigned you can assign yourself under Tools>Keyboard Layout>Customize. You can also reassign the factory default ones if you really want to.
Just back up the customized layout, because a good ol’ trash preferences will wipe out your customizations and you’ll have to rebuild them!

February 7, 2006 at 3:50 pmOh, and the keyboard layout will also give you the shortcuts in keyboard form. If you have show tool tips enabled in your user preferences, and you hover your mouse pointer over a key, it will tell you what the tool icon is.

This is the best FCP keyboard map in my experience. What is really great about it is you can open it up in Mac OS X Preview or Adobe Acrobat, Command+F (Search), type a key word like mark, canvas, viewer, et al and it will take you right to the all shortcuts keys related to say like mark, mark in, mark out.
From within FCP hold your Control key while you have your cursor hovering over the dark grey blank area to the right of the tabs in any window–Browser, Viewer, Canvas, Timeline, et al–and a “Context” menu will pop up with Show Keyboard Layout or Show Button List. And like debe says, you can get to them with Option+J = Show Button List and Option+H = Show Keyboard Layout.
