Kona audio out and optical audio out
I’m on a Mac Pro with a Kona 3 card. i would like to monitor audio with the Kona 3 (via an AES to Analog converter) through my speakers, but also hook up a Behringer Ultra-Curve Pro with VU meters through the optical out of the Mac Pro. i don’t see an option in Final Cut to output audio to multiple outputs. is this possible?

No you can only pick one output. Even if you could do two, they wouldn’t be in sync with each other. Get a Behringer Ultramach Pro. With that you can output analog and optical from the same AES source.
