This is true, but sometimes when you have a sequence which contains clips of different field dominance, they can sometimes ‘judder’ on playback. If I am not monitoring at full frame, surely this might slip through and end up being played out onto tape?

You are monitoring full frame, it is only on pause. If you field order issues, you will see it on playback.
