Is this 3d animation or reversed real video?

I don’t think it is reversed, as it would be quite a trick to drop hamburger ingredients and have them land in the shape of a hamburger.
I suspect they smacked the burger with something from underneath.

I concur, hit from underneath ans shot at high speed to get the slow motion.

I did the commercials for Harvey’s for a year: they shoot it all practically and it’s touched up in post. For instance they might not like how you can see a bit of hot pepper in a certain spot so it would have to be removed in post (or perfectly colored to a different veggy). They likely went into double overtime getting that slowmo toss up, McDonalds is notorious for 24 hour shoot days.
