I want to have a button, where the unselected state is plain white, but when selected the text has multiple colors including gradients. Is this even possible?

It’s not possible using just the subpicture highlight, but it is possible using multiple duplicate menus and the auto-activate properties of buttons to get a sort of roll-over effect. The gradients and colors would be applied to the button graphic layers, not the subpicture layer(s).

If you run into trouble or just need more help, post back here.

So I assume there is no way to use the duplicate menu method if I am using menus that have video backgrounds (ie, the video would never synch up when the menu changes). Correct?

No…the DVD-Video format is not capable of this.
