how do you convert everything to 2 pantone colors and finding all strokes that are below .5 width?

1) Pantone Color Question
I have a artwork design that uses green, brown (both pantone) and black, grey and white. The colors need to be as follows for a spot color printing:Color summary:
Pantone – Solid Coated
Green – 375 C
Brown – 4495 C
Grey (shadows)- Use black with less density
Black – “flood”
White – “flood”Printer company has said, not all of your colors are pantone. Please convert them all to Pantone. Some may be CMYK.
What is the best way to:
1a) find all colors being used in the file then
1b) convert them to one of the 2 pantone colors above or to a “flood” (not sure exactly what this means – assuming its the color of material being printed on)2) Printer company has also said, not all the strokes meet the minimum width of .5 requirement.
What is the best way to:
2a) find all strokes/lines being used in the file that are below .5 width then
2b) convert them to .5 width or higher?For both 1) and 2) is there like a Find All and Replace/Edit type option or approach?
