how do you convert everything to 2 pantone colors and finding all strokes that are below .5 width?

1) Pantone Color Question
I have a artwork design that uses green, brown (both pantone) and black, grey and white. The colors need to be as follows for a spot color printing:Color summary:
Pantone – Solid Coated
Green – 375 C
Brown – 4495 C
Grey (shadows)- Use black with less density
Black – “flood”
White – “flood”Printer company has said, not all of your colors are pantone. Please convert them all to Pantone. Some may be CMYK.
What is the best way to:
1a) find all colors being used in the file then
1b) convert them to one of the 2 pantone colors above or to a “flood” (not sure exactly what this means – assuming its the color of material being printed on)2) Printer company has also said, not all the strokes meet the minimum width of .5 requirement.
What is the best way to:
2a) find all strokes/lines being used in the file that are below .5 width then
2b) convert them to .5 width or higher?For both 1) and 2) is there like a Find All and Replace/Edit type option or approach?

1a) Select one of the filled items on your artboard and Select > Same > Fill color, then apply a new swatch – see 1b below.
1b) Save the Pantone swatches to your document’s Swatches palette. And, from the Swatches drop-down menu, Open Swatch Library > Color Book > Pantone Solid Coated. This is where you can find swatches to replace your black and white.
2a) This might depend on your document settings, but presuming all of the strokes are the same weight, you can select one and Select > Same > Stroke weight, then set the appropriate weight in the Stroke palette.
If, however, you have Scale Stroke and Weights enabled in your preferences they might all be different weights, in which case Select Same Weight may not work, but Select > Same > Stroke Color might.2b) Once the strokes are selected, you set the weight in the Stroke palette.
I’m not sure about the ‘flood’ reference. Is your black or white intended to represent the color of your print medium/surface? If so, I’d supply artwork that doesn’t have a color in those areas.
If you can, do a color test print before sending to the printer.
