Now that both are available to update, can we safely update our FCP and QT to the new version?

Apple saids that 7.03 is fine to do. I upgraded 4 of our bays and all is well.

Yes, in fact I would encourage you to update given the fixes in the latest versions. I’ll update the relevant support notes today with those versions.
