Exporting 8 channels of audio for iTunes

If you’ve got 24bit source material it will be 24bit. Where are you seeing it is 16 bit? Open in QuickTime and choose Get Info to see.

I ran into the same problem, and the info I was getting from the web sort of helped me come to this solution, which seems to work perfectly:
