    I’m looking for functionality in PS equivalent to that of the iPhone app “brushes” – specifically the option to export a movie that shows the progression of paint strokes and the painting “being painted on”.
    (PS video layers and their keyframes won’t do)

    I’ve considered screen capture software, but I don’t want to see PS pallettes & dialog boxes etc. floating around over the art in the exported video.

    I’ve also considered After Effects, but keyframes on a gazillion strokes on an intricate painting will be cumbersome. (just want to be able to export to a consistent frame rate to a format like AVI/MOV)
    Also the AE brushes are going to be limiting.

    Any comments/suggestions are HUGELY appreciated.
    (scripts / plugins / alternative software etc?)…

    There are a couple of ways to do this easily in After Effects without keyframing individual layers. Try Vector Paint in AE.

    Create a path in Photoshop using the pen tool, then choose “export paths to illustrator”. Load that file into After Effects and see if it works.

    Your best option still is to use a screen recording software. You can hide your palettes with the tab key and by hitting f twice you can also hide the top menu bar and keep a clean screen.
