I’m sure much of this has been covered so I apologise in advance and if you want to steer me to some tutorials or posts, I’d be grateful.

Can I offer a print to DVD (MPEG2) system online that is easily operated by even novice PC users? Are there many good exaples of such services? How many hours of MPEG2 can I reasonably offer online?

If you are creating a very large video server is it always best to run you own server or are there good enough server deals out there and who are they?

Your touching on the future of DVD distribution. Major Porn companies are using BitTorrent technology to distribute TS folders over the internet, ready to burn onto DVD.

A studio is also considering the same thing but you have to use thier DVD player and it will only work on a computer 🙁

The technology use several servers to distribute 1 large file in smaller chunks so a multi-Gig file can be downloaded in minutes not hours.
