A customer of mine asked if I could put his MiniDV tapes onto hard drive for him, So he could take the Hard drive in to have it put on Betacam SP. The transfer facilty uses Mac’s, they would prefer to have the files on hard drive in Quicktime format. After I capture the files with PPro they will be in Microsoft DV AVI codec, what will be my best setting for export to QT for a final 720 x 480 Beta SP.

It is a lossless render, the equivalent of Avi uncompressed, but a bit smaller in size. Since you have that hardrive, why not get the best 😉
