    I’m trying to create a cave-like tunnel,
    and then have a camera flythrough inside.

    BUT, I want the walls of the tunnel to be jagged, with all sorts of bumps, holes
    and stuff – looking like it was carved with a shovel or something.
    This is all supposed to go into a Doom/Quake-style sequence,
    so the modeling can be scruffy – early 90’s or not ?
    this looks cool with some pixelated texture of sand.

    any ideas on that ?

    Use a sweepNURBS to create the tunnel and apply a material with bump and/or displacement. You can get some very cool effects if you enable the sub-poly displacement option. Then you can use the sweep path as your camera track.
