Creating a film look Grain/ Deinterlacing

I have shot a music video on Mini DV and am looking for advice on a couple of film look techniques.
The first matter is deinterlacing. I have seen that there are a number of ways to do this, and as I understand it some methods allow you to deinterlace without loosing as much resolution (an important consideration since I am already starting with Mini DV). What techniques or Plugins should I look at?
Secondly the grain. I am going for a monocromatic look (though not totally B&W) on most parts of the video. Again, plugin recommendations would be appreciated. Also, if anyone can shed light on the different settings found in most plugins, ie: what are the differences with red blue and green grain? (I have noticed that even on a monocromatic setting these all still have combined effects).
Incidentally, we are going for a subtle use of grain, to hint at a film look and help tie comps together.
I don’t have access to film scans at the moment, so plugins that use scans of film to reproduce grain are not ideal (though if anyone feels there is no acceptable alternative I can look into sourcing some).Thank you all for your time

One darn good and inexpensive solution is the Nattress G Film plugins. They give you all the control over grain, dust and scratches, bleach bypass, everything. Very easy to use.
