Is there any way using AE to create a partial sphere—with a 1/4 cutaway, for example? I’m thinking something similar to those old drawings of the earth’s layers in my geology textbooks. Is there a plug-in out there that does this, or is there a way to fake it using CC or Continuum?

You can do this using CC Sphere. I’m not 100 percent sure (not at my AE atm), but it has a sweep setting somewhere that should allow something like you described. The sides could easily covered by using the Circle effect on a separate layer cut away with masks.

… or you could create the usual 2×1 proportioned solid layer for the CC Sphere, then mask off part of the solid to create the partial sphere. You might need to precomp the layer, applying the effect to the precomp but masking within the precomp.
