Sounds like the famous compressor bug of ever increasing time…. Stop the process, force quit if necessary. Re-boot the Mac and try again.

I had found in some cases the encode will continue even on the reboot. Sometimes going in to Activity Monitor and killing all things Compressor and even QMaster related helps.
