Color efffects

I use Avid Media Composer and can’t seem to figure out what color effect or effect mode or mask tool to use in order to take a clip and change it to black and white except only one or more parts or images in the clip. I just upgraded to Media Composer and can’t seem to find in the effects guide manual how to accomplish this task.

I can not see an Invert key in the Spectramatte Keyer effect. Can you help?
