    I have a very basic image; black text on a white background. If I want to change that background to red, how do i do that (in photoshop)?

    Select the white background (via W) and fill the selection with a color using Shift F5

    Not too tough, just select your background layer (assming you put the text on a separate layer above your background). Then go to the color boxes that show one colour over another. Click the front one and make it red. Then go to your paintbucket tool and just click the background once and it will fill the whole thing.
