I’m very new to C4D. In fact I’m very new to 3D so forgive my lack of basic knowledge.

I am creating a model from a Cube and chose 4 segments in X,Y and Z so that I could rough it out really quickly without having to select a couple of dozen faces for every maneuver. Now that I have the basic shape I want to add more detail and therefore more segments.

how do I increase the number of segments after I have made my primitive editable?

Well, select some of your faces (polygons) or select all…
Go to Functions / Subdivide / choose your Subdivision and click OK.

If you need so many faces to work on perhaps you may want to try modeling with hypernurbs.
Here is a great starter tutorial that will help you with many of the modeling tools and show the most common approach to modeling in cinema. Its free but you need to to sign up.

Strange that you should suggest that. I am trying that out at the moment.

How do I import a jpg to use as a reference image?

While in a flat view (right or top) press shift V and you will get your view options, there is a place there to load an image.
