Is it possible to create template for client who doesn’t know anything about AE to easy replace photo and 1 line of text and export video. something like he just need to copy photo in some watch folder and add line of text in some txt file.

A lot of what you do will depend on the sophistication of your user. I sometimes make a pre-comp called “put footage here” or “change text here” for techniques I use very frequently.
You may want to include example footage and title it “delete this footage” or “change this text”.
