AE color spaces – which “working space” to use for largest gamut?

I have a question about how to choose a working colorspace in After Effects to ensure largest possible gamut in our project.
Our project involves working in After Effects and taking linear uncompressed 16-bit EXR image sequences rendered from Unreal Engine, doing some compositing and color correction on them, and outputing 10-bit DPX image sequences in Rec. 2020 color space for the final edit.
My questions…
1) Since our outputs will be done in the Rec. 2020 colorspace, should we be setting our working space also to Rec. 2020? Or is it preferable to choose a working space with wider gamut (ex. ACEScg)? We would like to ensure that our After Effects comps are in the largest possible gamut and for the gamut reduction only to happen in the output.
2) Will using the working space “sRGB IEC61966-2.1” (with Linearize Working Space enabled) reduce the gamut of our outputs? I understand sRGB is a considerably smaller gamut than Rec. 2020, but I am not certain whether…
A) using the working space “sRGB IEC61966-2.1” reduces the gamut of colours in the output, or
B) using the working space “sRGB IEC61966-2.1” does not reduce the gamut of colours in the output, and instead only changes the gamma of pixel-blending operations
Curious to hear from anyone who can shed light on this.
