Advise on Creating Screen Capture Tutorials

I want to do a couple of screen capture tutorials and I’m looking for some tips and advise on how to efficiently do this. I will be making tutorials for Adobe After Effects, Adobe Photoshop, internet marketing tools (i.e. WordPress) and other programs I know.
Yesterday I started making an After Effects tutorial and I had to stop the recording and start again more than ten times. What I been doing is writing everything I’m going to say in a text document and I put it on my second display monitor when I’m doing the tutorial. What happens is that I get confuse when I change from one monitor to the other, basically losing sight of where I’m suppose to read. Because of this I make a lot of mistakes :-). I also try doing it without any notes and that really didn’t work because I didn’t knew what to say in an organized faction.
Naturally I will make some mistakes, but are there some tips to do a more comfortable recording in this types of tutorials, without making so many mistakes?. I’m not looking for a step by step “seminar” on how to do this, I just want to hear what works best for tutorial makers here.
I’m using a program called “Screenium” for Mac. I don’t like it that much, so I’m looking for alternatives. I’m considering Camtasia, but I don’t see the use of having the video editing software since I edit my videos in Premiere Pro CS5. Any recommendations?
