Gamma has nothing to do with quality. It is a measure of luminance. You should use 2.222 unless you have a compelling reason not to.

Profiles and Levels are subsets of the entire MPEG4 standard. Baseline is the minimum that must be supported. Main is the next profile up from Baseline so Main provides more features/quality.

Those are all different algorithms for creating a blur. None is “better” than the other. It depends on the look you are after. Most people use Gaussian which is the default.

Blend fields will combine the two interlace fields by blending to make them smoother. It works well with high detail, low motion because it retains full resolution. Interpolate throws half of the fields away. This reduces resolution but is good for high motion where blending still produces undesirable effects.
