I can afford one of the two M.2 options, 1 x 500GB or 2 x 250GB. Would it be better to get 2 x 250GB drives, one for the OS + software and one as a cache drive for rendering, or are the speeds of these two drive types enough so that OS + software + cache can be all on one drive with no performance drops?

Two SSDs can work faster, and you’ll be safe if something goes wrong.

While a dedicated cache drive is nice, a system drive that’s big enough to hold your apps and documents is nicer. I’d get the single 500 GB option.

I would normally agree with your good advice. But in my experience, there’s not normally enough I/O on the system drive to cause a performance issue with the cache, and there’s no additional data safety here unless the two drives are mirrored.
